Jiko Macaroni and Cheese Recipe

I'm back! I hope you didn't miss me too much :) So, I have two toddlers. There was a time, far in the past, that my husband I could go to Walt Disney World and spend our days eating at signature restaurants. One of our favorites has always been Jiko at the Animal Kingdom Lodge. If you are a Disney fan, I am sure you have either heard of or tried the Oak Grilled Filet Mignon and Macaroni and Cheese with Red Wine Sauce. This is no longer on the menu. The filet is currently served with spoon bread and pole beans. You want to know a secret? You can still order the macaroni and cheese even though it is not on the menu anymore! 

Now, back to the toddlers. They make it unpleasant if not nearly impossible to dine at signature restaurants. I imagine it will be a few years before we can introduce them to the magic of the gourmet food scene at WDW. So, I am reduced to recreating my favorite recipes here at home. And this is actually a recipe said toddlers can enjoy!

Macaroni & Cheese
Animal Kingdom Lodge

This macaroni and cheese is paired with Jiko's Oak-Grilled Filet Mignon and Red Wine Sauce. For the Red Wine Sauce recipe, click here.


1/4 cup butter 
1/4 cup flour 
1 quart whole milk 
1 1/4 cups Quattro Fromage (4-cheese mixture of asiago, provolone, fontina, and gruyere cheeses)

2 pounds elbow macaroni


1. Prepare the macaroni according to the directions on the package.

2. Make a roux with the flour and butter over low heat. Bring the milk to a simmer and work in the roux.

3. Add cheese and salt to taste. Pour over the macaroni and heat through in a moderate oven.

This recipe came together really quickly. In fact, it only took me about 15 minutes start to finish. It is delightfully simple and cheesy. I think that's why it has such wide appeal. It is easy for everyone to love. So go to your kitchen and make it right now! And then hurry back and tell me how you liked it!
